Sunny Skewers
Time: 20 min — Difficulty: ★☆☆ — Portions: 6
Preparation:
1. Slice the zucchini into thick rounds or half-moon shapes.
2. Core the bell pepper and cut into large chunks.
3. Peel the red onion and slice into thick rings.
4. Cut the Yellow Sunshine into medium-sized chunks, about the same size as the bell pepper pieces.
5. In a bowl, mix the olive oil, dried herbs, salt, and pepper.
6. Add the prepared vegetables to the bowl and toss well until everything is evenly coated with the marinade.
7. Let the vegetables marinate for about 10–15 minutes to absorb the flavors.
8. Thread the marinated vegetables and Yellow Sunshine onto the soaked wooden skewers, alternating them—for example: zucchini, pepper, onion, Yellow Sunshine. Arrange them as you like.
9. Preheat the grill to medium heat.
10. Place the skewers on the grill and cook for about 10–15 minutes, turning regularly, until the veggies are nicely browned and cooked through.
11. Remove from the grill and serve immediately. They go wonderfully with rice, quinoa, or a fresh salad.

· ½ zucchini
. 1 red onion
. 2 Yellow Sunshine (flavor of your choice)
. ½ bell pepper
. 2–3 tablespoons olive oil
. 1–2 teaspoons dried herbs (like oregano or thyme)
. Salt and pepper to taste
. Wooden skewers (soak in water before use to prevent burning)
