Who is behind Yellow Sunshine?
Yellow Sunshine is the brainchild of New Roots. A dedicated team of food scientists, agricultural experts, and passionate environmentalists. Each member is committed to transforming how we think about and consume food. We are a brand that is valuing quality, transparency and new ways of agricultural processes over profit.
Where is Yellow Sunshine produced?
Our products are crafted in our state-of-the-art facility without the needs of any fossil fuels, located in the heart of Switzerland, surrounded by the farms where some of our ingredients are sourced.
Our Ingredients
What is lupin, and why do you use it?
Lupin is a legume rich in protein and dietary fiber. It has 40% of protein and we use it due to its low environmental impact, its ability to enrich soil, and its excellent nutritional profile which supports a healthy diet. Lupin has no cholesterol, no saturated fats and no lactose.
Where do lupins come from? Our lupins are sourced from regenerative farms in Switzerland and Germany, primarily from areas known for their fertile soil and sustainable farming practices.
Why lupin?
Lupin is chosen for its versatility, nutritional benefits, and its role in promoting sustainable agriculture. It's a perfect fit for our mission to provide healthy, eco-friendly food options that are transparently grown by farmers. With its high protein content of about 40%, lupin is an attractive new ingredient for local farmers looking to transition away from animal farming. Lupin is also a great ingredient for crop cycle for farmers, since it brings back nitrogen into the soil, avoiding using chemical fertilizers to enrichen the soil.Lupin is a beneficial addition to crop rotation as it naturally restores nitrogen to the soil, thereby reducing the need for chemical fertilizers.
What are amino acids and why are they important?
Amino acids are organic compounds that combine to form proteins, which are essential for various bodily functions. They support muscle growth, energy production, and overall health. Our lupin-based products are rich in these vital nutrients and contain all essential amino acids.
Why organic?
We commit to organic ingredients to avoid the use of synthetic pesticides and fertilizers, ensuring that our products are natural and safe while also protecting the environment.
Why fermented?
Fermentation enhances the digestibility, flavor, and nutritional value of foods. This process also naturally extends shelf life and enriches our products with beneficial probiotics. We think that food should be alive and fermented as nature has intended. This is the reason why all products from yellow sunshine are fermented and alive, which will be good for your gut.
Why do we use high oleic sunflower oil instead of regular sunflower oil?
Because some of our products are also heated during preparation, we carefully select oils that are stable at high temperatures. High oleic sunflower oil contains very few polyunsaturated fats, making it ideal for cooking.
It’s rich in oleic acid (omega-9) — over 80% of its composition — which gives it a fatty acid profile very similar to olive oil, while remaining neutral in taste and extremely versatile.
Why high oleic sunflower oil matters:
Excessive intake of omega-6 fatty acids (found in regular sunflower oil) may promote inflammation in the body.
Our choice of high oleic means:
- Up to 85% less omega-6
- A heart-healthy profile similar to olive oil
- A more balanced fatty acid composition
- Greater stability for storage and cooking
- Neutral flavor
- Safe for high-heat cooking
Cooking & storing
How do I prepare it?
You can eat it raw in a salad as Feta or cheese cubes, in a sandwich or in an “egg” salad, fry it in the pan for a plant-based scrambled “eggs”, grill it as is or on skewers, cook it in a curry, etc. Honestly, you can’t go wrong, so let your imagination roam wild! Get inspired by our recipes!
Can your products be frozen?
Indeed, the product can be frozen. It may lose a bit of its consistency, so its quality for raw consumption might diminish. However, when cooked, the quality should not change drastically.
How can I store it?
The product can be stored under cool conditions (+4°C to +7°C) when packed to its experimental shelf life. Once opened, we suggest using the product within 2-3 days. Please check the odor if you happen to have a product past its experimental shelf life and do not throw it away. Mostly, it lasts longer than anticipated.
