Protein-Packed Pasta Salad

Preparation:
1. Cook the pasta according to package instructions. Drain and rinse with cold water to cool.
2. While the pasta cools, prep your veggies: dice cucumber, halve cherry tomatoes, chop onion and herbs.
3. Cube the Yellow Sunshine and pan-fry for 2–3 minutes on medium heat (optional, you can also have it raw!)
4. In a large bowl, combine cooled pasta, veggies, herbs, and Yellow Sunshine cubes.
5. In a small bowl, whisk together olive oil, lemon juice, mustard (if using), salt, and pepper.
6. Toss everything together and chill for 10–15 minutes before serving.
Ingredients:
· 200g pasta (fusilli, penne, or farfalle)
· 1 Yellow Sunshine (flavor of your choice), cubed
· 1 small cucumber, diced
· 1 cup cherry tomatoes, halved
· 1 small red onion or shallot, finely chopped
· 1 small handful fresh parsley or basil, chopped
· 2 tbsp olive oil
· 1 tbsp lemon juice or apple cider vinegar
· Salt & pepper to taste
· Optional: 1 tsp Dijon mustard or a pinch of chili flakes for extra flavor
