Greek Salad

Time: 15 min — Difficulty: ★☆☆ — Portions: 4

Preparation:

1. Peel the red onion and slice it into thin rings.

2. Peel the cucumber, cut it in half lengthwise, and slice it into thin half-moons.

3. Core the red bell pepper and cut it into strips.

4. Dice the tomatoes.

5. Cut the Yellow Sunshine into cubes.

6. Pit the black olives and cut them in half.

7. In a small bowl, mix the balsamic vinegar with olive oil, then season with salt and pepper.

8. Place the onion, cucumber, bell pepper, tomatoes, olives, and Yellow Sunshine cubes into a large bowl.

9. Pour the dressing over the salad and mix gently to combine.

10. Taste and adjust seasoning with additional salt, pepper, or fresh herbs if desired.

· 1 pack Yellow Sunshine Herb Garlic
· 1 red onion
· 3 tomatoes
· 1 cucumber
· 1 red bell pepper
· 1 handful black olives
· 2–3 tablespoons balsamic vinegar
· 4–5 tablespoons olive oil
· Salt and pepper to taste
